Sorella Italian Ginger Plum Sour

Ingredients
2oz Painted Lady Gin
1.25oz Plum Purée
1oz Lemon
.25oz Ginger Syrup
1 Egg White
Garnish: Lemon Twist
The Process
In cocktail shaker combine all ingredients. Shake vigorously until drink is smooth. Strain into a chilled coupe glass and garnish with a lemon twist.
Notes:
If using egg whites dry shake first then add all other ingredients and shake. If using egg white powder add with all ingredients and shake.
For lemon twist use channel knife to cut a thin strip of lemon peel. Using the twisted part of a bar spoon wrap lemon peel around spoon handle to create the perfect twist.
